Stumptown Coffee Roasters in Portland, Ore

Why you have to see it: Stumptown manually brews its toddy for 12 hours before serving it to customers. Toddy is the most caffeinated drink you will ever have, and it’s less acidic than hot coffee, along with having a natural chocolate taste from 12-hour infusion. It’s also the perfect hot summer day drink, so why even fool yourself into thinking you want a 100-degree drink on a 100-degree day?

Coffee Cake Recipes

Mention coffee cake and images of Grandma’s house sitting around the table with a fresh baked streusel cake and lots of family chatter. It’s doubtful that many of the cakes considered coffee cake today actually contain coffee. Some recipes do and some don’t. Many consider a crumb cake served with coffee one while others insist that the recipe contain coffee to be considered a coffee cake.

History

The coffee cake as it is today is an evolution across time and continents. Cakes have been being baked since the Biblical days of honey cakes. Next came what is known as the fruitcake, a culinary invention of the French known as galettes. These same galettes led to sweetened yeast breads or rolls which finally evolved into Danish coffee cakes that were made with coffee.

As time progressed and recipes changed and were handed down there were inevitable alterations. Perhaps more coffee was added or even taken out all together. By the time the late 1800’s rolled around the coffee cake was a household name in America with countless numbers of recipes and variations with most being either streusel, crumb or streusel-crumb combination.

Today’s coffee cake hasn’t changed that much from those of the late 1800’s. The recipes have been changed and there are literally thousands of variations, but overall, it is still either a crumb cake or a streusel cake or some combination. Add pot of piping hot coffee and no one really cares what it’s called.

Following are two recipes for simple yet scrumptious cakes. Bake one up and gather the family together and swap stories while enjoying great food and even greater company.

Blue Mountain (Jamaica) – $49/lb.

blue

Blue Mountain coffee has a worldwide reputation for excellence, and consumers from one corner of the world to the next can’t seem to get enough of it, even at $49 per pound. Approximately 80 percent of the coffee produced at Blue Mountain is exported annually to Japan. The coffee itself is grown at 5,000 ft. above sea-level in the Blue Mountains of Jamaica, where heavy rainfall influences growth and the beans are processed. Due to the abundance of water, the coffee beans are pulped from their coffee cherries soon after being picked, which gives Blue Mountain coffee it’s signature well-balanced, mild flavor.

Coffee Yauco Selecto AA (Puerto Rico) – $24/lb.

yauco

Coffee has long been a commercial crop in Puerto Rico, and this bean serves as an economic staple in both domestic and foreign markets. What makes coffee from the Yauco region of Puerto Rico so rich in flavor is a combination of natural elements and farming techniques. The amount of rainfall in the Puerto Rico is high, especially at high elevations in the mountain region where this bean hails from. Additionally, the nutrient rich clay soil gives this coffee its own specific flavor. The limited availability of Coffee Yauco Selecto AA lends to the high price tag. What can a coffee connoisseur expect from a freshly brewed cup of Puerto Rico’s finest coffee? This bean has a full-bodied, buttery flavor with mild chocolate undertones.

Starbucks Rwanda Blue Bourbon (Rwanda) – $24/lb.

rwanda

Bourbon coffee is an heirloom variety of Coffee Arabica, which Rwanda is known for because of the climate. Starbucks Rwanda Blue Bourbon coffee offers a highly acidic, black cherry and butter melt blend with notes of spiced nut, and certainly the flavor of this bean isn’t the only thing worth raving about. Starbucks aided in establishing more coffee farms in Rwanda as a social mission to rebuild the country whose economy was shaken by internal violence. The fair-trade coffee movement and attempt to restructure the economy of the country has led to its high popularity of Rwandan beans on the global coffee market. The coffee cooperatives of Rwanda rely on this Black Apron Exclusive bean as one of their primary crops.
